Forget store-bought macaroni salad — ours is a light, well-seasoned spin on the high-fat standard. For added color, stir in some diced tomatoes. Swap regular pasta for the whole wheat pasta, if desired.


Uncooked whole wheat elbow macaroni

8 oz

Table salt

tsp, or to taste (for cooking pasta)

Reduced calorie mayonnaise

½ cup(s)

Red-wine vinegar

1 Tbsp

Dijon mustard

1 tsp

Garlic powder

½ tsp

Uncooked celery

1 cup(s), chopped

Uncooked red onion(s)

cup(s), chopped

Fresh parsley

2 Tbsp, chopped

Table salt

¼ tsp, or to taste

Black pepper

tsp, freshly ground, or to taste


  1. Cook macaroni in salted water according to package directions; drain and transfer to a large bowl.
  2. Meanwhile, in a medium bowl, whisk together mayonnaise, vinegar, mustard and garlic powder; stir mixture into cooked macaroni. Fold in celery, onion and parsley; season to taste with salt and pepper. Serve warm or chilled.
  3. Yields about 2/3 cup per serving.
