Citrus & Ginger Roasted Broccoli

A simple orange, ginger and soy sauce drizzle gives broccoli both a sweet and spicy note and elevates the humble veggie to a rave-worthy side. It comes together quickly and is sure to be your new weeknight go-to veg. To save time, zest and juice the citrus and mince the garlic and ginger while the broccoli cooks. If you’d like to add a little heat, stir in some crushed red pepper or cayenne pepper. We loved the soy mixture with broccoli, but it would also be quite delicious with roasted green beans or carrots. Serve with an Asian-inspired fish dish and rice.

Ingredients

Broccoli

1 head(s)

Olive oil

1 Tbsp

Low sodium soy sauce

1 Tbsp

Orange juice

2 tsp

Orange zest

2 tsp

Fresh ginger

1.5 tsp

Jarred minced garlic

1.5 tsp

Instructions

Preheat oven to 450ºF. Coat a large baking sheet with cooking spray.

Toss broccoli with oil; spread on prepared pan in an even layer. Roast, stirring once halfway through, until lightly browned, about 20-25 minutes.

While broccoli roasts, in a small bowl, whisk together soy sauce, orange juice, orange zest, ginger and garlic.

Immediately drizzle cooked broccoli with orange mixture and serve.
