Sheet cakes make the perfect dessert to feed a crowd and this rendition is no exception. Here, we’ve made a traditional chocolate sheet cake, but we’ve given it a delicious peanut butter twist. Chocolate powdered peanut butter in both the cake and frosting takes the cake from good to great and it’s any chocolate and peanut butter lover’s dream! Look for the chocolate powdered peanut butter next to the regular jarred peanut butter at your supermarket. If you have a smaller gathering, feel free to wrap any leftovers in plastic wrap and store in the freezer for up to 1 month.

All-purpose flour

Instructions

  1. Preheat oven to 350°F. Grease a 17 x 11 x 1-inch sheet pan with non-stick cooking spray. (Similarly sized sheet pans may also be used).
  2. In a large bowl combine the flour, sugar, 1/2 cup powdered peanut butter, baking soda, and 1/4 tsp salt. In another bowl whisk together the buttermilk, 1 tsp vanilla and eggs.
  3. In a medium saucepan set over medium heat, melt 1 cup butter. Add 1/4 cup of the cocoa and water and bring to a boil, stirring frequently until mixture is smooth. Remove from heat and pour into the flour mixture, whisking until combined. Add the buttermilk mixture and whisk until smooth.
  4. Pour batter into the prepared sheet pan. Bake for approximately 20 minutes, or until the cake is springy to the touch.
  5. While the cake is baking, prepare the frosting. In a medium saucepan set over medium heat, melt the remaining butter. Add the remaining cocoa and mix until smooth. Remove from heat. Whisk in the milk and remaining vanilla extract, followed by the powdered sugar, remaining powdered peanut butter and remaining salt. Whisk until frosting is smooth. Stir in the chopped peanuts, if using.
  6. Immediately pour the frosting over the warm cake. Let sit for at least 30 minutes before serving.
