Ingredients

All-purpose flour

1½ Tbsp

Kosher salt

¾ tsp

Black pepper

¼ tsp

Uncooked boneless skinless chicken breast

¾ pound(s), cut into chunks

Olive oil

2 tsp

Reduced sodium chicken broth

1 cup(s)

Garlic

2 large clove(s), minced

Red pepper flakes

¼ tsp

Broccoli rabe

½ pound(s), coarsely chopped

Canned cannellini beans

15 oz, rinsed and drained

Fresh lemon juice

1 tsp

Lemon zest

½ tsp, grated

Instructions

  1. Mix together flour, 1⁄2 teaspoon salt, and black pepper on sheet of wax paper; add chicken and toss until coated evenly.
  2. Heat oil in large heavy nonstick skillet over medium-high heat. Add chicken and cook, turning, until browned and cooked through, about 6 minutes; transfer to plate. Add broth, garlic, and pepper flakes to skillet; bring to boil, scraping up browned bits from bottom of pan. Add broccoli rabe; cook, covered, until almost crisp-tender, about 3 minutes.
  3. Add beans to skillet; cook, covered, until broccoli rabe is tender, about 2 minutes longer. Uncover and mash some beans to thicken sauce slightly. Stir in chicken and cook until heated through; sprinkle with lemon juice and zest and remaining 1⁄4 teaspoon salt.
  4. Serving size: about 1 cup

Notes

You can use regular broccoli in place of broccoli rabe in this recipe if you like.
