Cooked boneless skinless chicken breast

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper. Coat the paper with cooking spray.
  2. Put the roll up on the prepared pan and lightly coat with cooking spray. Bake 3 minutes.
  3. Meanwhile, in a medium bowl, stir together the mayo, yogurt, Dijon, lemon juice, anchovy paste, garlic powder, salt, pepper, and 2 tsp water. Set aside 1 tbsp of dressing. To the bowl with the rest of the dressing, add the chicken and toss to coat.
  4. Spoon the chicken onto pre baked roll up. Top with the mozzarella. Bake another 5 minutes, until edges and bottom are golden brown.
  5. Top the flatbread with the romaine. Drizzle with the reserved dressing and sprinkle with the Parmesan.
