It makes a fine accompaniment to a wide array of main items like grilled chicken, roasted pork, or even sandwiches. Streamline your prep and mince the garlic and slice the red peppers while the broccoli steams. You can make this speedy side, even quicker by using a 12-ounce package of steam-in-the-bag fresh florets instead of cutting up a whole head of broccoli yourself. For a Greek-inspired variation, substitute crumbled feta or goat cheese for the shredded Cheddar.

Shredded fat free Cheddar cheese

  1. Heat the oil in a large nonstick skillet over medium-high heat. Add the broccoli, garlic, and oregano; cook, stirring frequently, until the garlic is golden, about 3 minutes. Stir in the cheese and roasted pepper; cook, stirring frequently, until heated through, about 2 minutes. Yields about 3/4 cup per serving.


To steam the broccoli, put it in a steamer basket and set in a saucepan over 1 inch of boiling water. Cover tightly and steam until the broccoli is crisp-tender, about 3 minutes.
