You can make this speedy side, even quicker by using a 12-ounce package of steam-in-the-bag fresh florets instead of cutting up a whole head of broccoli yourself. For a Greek-inspired variation, substitute crumbled feta or goat cheese for the shredded Cheddar.

Instructions

  1. Heat the oil in a large nonstick skillet over medium-high heat. Add the broccoli, garlic, and oregano; cook, stirring frequently, until the garlic is golden, about 3 minutes. Stir in the cheese and roasted pepper; cook, stirring frequently, until heated through, about 2 minutes. Yields about 3/4 cup per serving.

Notes

To steam the broccoli, put it in a steamer basket and set in a saucepan over 1 inch of boiling water. Cover tightly and steam until the broccoli is crisp-tender, about 3 minutes.
