Cheesy Broccoli and Peppers

olive oil2 tsp
uncooked broccoli1 pound(s), chopped and steamed
garlic clove(s)3 clove(s), medium, minced
dried oregano¼ tsp, crumbled
shredded fat-free Cheddar cheese½ cup(s), sharp variety
roasted red peppers (packed in water)¼ cup(s), cut into matchstick-thin strips
- Heat the oil in a large nonstick skillet over medium-high heat. Add the broccoli, garlic, and oregano; cook, stirring frequently, until the garlic is golden, about 3 minutes. Stir in the cheese and roasted pepper; cook, stirring frequently, until heated through, about 2 minutes. Yields about 3/4 cup per serving.
