Serve breakfast for dinner or upgrade your weekend morning ritual with these family-pleasing quesadillas loaded with egg, cheese and turkey bacon. To make this a simple dish with easy clean up, use the same skillet to cook each component of the recipe. Recoating the skillet with cooking spray between each quesadilla will help turn the tortillas golden brown and crisp. For a spicier flavor, serve with hot salsa and, although the sodium might slightly increase, try southwestern seasoned liquid egg substitute in the place of the plain variety. Pair with a side salad or bowl of mixed fresh fruit to complete the meal.

Ingredients

Cooking spray

10" high fiber, low carb flour tortilla

Cooked turkey bacon

4 slice(s), crumbled

Shredded reduced fat Mexican-style cheese

¼ cup(s)

Salsa

½ cup(s)

Cilantro

2 Tbsp, chopped

Instructions

  1. Coat a large skillet with cooking spray and heat over medium-high heat until a drop of water drizzled on pan sizzles. Add eggs and reduce heat to low; scramble eggs until firm, about 3 minutes. Set aside and keep warm.
  2. Wipe skillet clean and recoat with cooking spray. Place skillet over medium-high heat and cook one tortilla for 2 minutes. Flip tortilla and place 1/4 of scrambled egg mixture, 1/4 of bacon and 1 tablespoon of cheese down center of tortilla. Fold tortilla in half and cook until filling is hot and cheese melts, about 1 minute more; set aside and cover to keep warm. Repeat with remaining ingredients.
  3. To serve, top each quesadilla with 2 tablespoons of salsa and 1/2 tablespoon of cilantro.
  4. Serving size: 1 quesadilla
