These pancakes are super tasty on their own but they're also amazingly versatile. Add a pinch of cinnamon and nutmeg, and a dash of vanilla extract to the batter. Or stir in a few spoonfuls of canned pureed pumpkin or some orange zest. Experiment to find your favorite flavor combinations.

- Mash banana in a medium bowl. Whisk eggs in a separate bowl; add to banana and stir well to combine.
- Coat a large nonstick skillet with cooking spray; set over medium heat. Spoon 3 Tbsp batter for each pancake into skillet (you'll have to do this in several batches). Cook over medium heat until edges are set and bottoms are golden, about 30 seconds-1 minute. Carefully flip pancakes with a thin spatula and cook on other side until bottoms are golden, about 30 seconds-1 minute more.
