These pancakes are super tasty on their own, but they're also amazingly versatile. You can add a pinch of cinnamon and nutmeg, and a dash of vanilla extract to the batter. Or stir in a few spoonfuls of canned puréed pumpkin or some orange zest.

Banana

1 medium, very ripe

Egg

2 large egg(s), beaten

Instructions

  1. Mash banana in a medium bowl until smooth. Whisk eggs in a separate bowl. Add to banana and stir well to combine.
  2. Coat a large nonstick skillet with cooking spray; set over medium heat. Pour about 3 tbsp batter for each pancake into skillet (do in batches, if necessary). Cook over medium heat until edges are set and bottoms are golden, about 1 minute. Carefully flip pancakes with a thin spatula and cook on other side until bottoms are golden, about 30 seconds to 1 minute more.
  3. Makes 1 serving (about 5 pancakes).
