These pancakes are super tasty on their own, but they're also amazingly versatile. You only need three ingredients to make them, one of which is cooking spray. Yes, it's really that easy. To mix things up a bit, you can add a pinch of cinnamon and nutmeg, and a dash of vanilla extract to the batter. Or stir in a few spoonfuls of canned puréed pumpkin or some orange zest. Experiment to find your favorite flavor combinations that'll satisfy you every morning. You can also easily scale up the ingredients if you want to make more than a couple of pancakes. Serve as is or top with fresh fruit.
