Ingredients

Cooking spray

Cajun seasoning

Paprika

1 tsp

Uncooked lean boneless pork chop

1 pound(s), 1/4 pound each, trimmed

Pineapple

1½ cup(s), diced fresh

Plum tomato

1 large, diced

Red onion

¼ small, chopped

Cilantro

¼ cup(s), fresh chopped

Jalapeño pepper

1 tsp, chopped

Table salt

1 pinch(es)

Instructions

  1. Stir together Cajun seasoning and paprika in small bowl. Rub pork chops with spice mixture.
  2. Spray stovetop grill pan with nonstick spray and set over medium-high heat. Add pork chops and cook, turning once, until instant-read thermometer inserted into sides of chops registers 145°F, about 6 minutes.
  3. Meanwhile, to make salsa, combine pineapple, tomato, onion, cilantro, jalapeño, and salt in medium bowl and stir gently to combine. Serve pork with salsa.
  4. Per serving: 1 pork chop and 1/2 cup salsa

Notes

If you’re using a salt-free Cajun seasoning, sprinkle the chops with 1/4 teaspoon salt.
