Breakfast parfaits with chia seeds

Cha cha cha chia! Back in the day, few knew that the seeds that made the kitschy ceramic pets advertised on TV sprout "hair" were so nutritious. Today, the poppy-like seeds are trending all on their own as a nutritional powerhouse rich in omega-3 fatty acids, fiber, and antioxidants. The type of fiber in the seeds gives them a unique ability to expand in liquid to create a custard-like texture as in this yogurt pudding-style parfait. Enjoy chia seeds sprinkled onto hot or cold cereal, blended into smoothies, or ground to add to muffins or pancakes.


Ingredients
Plain fat free Greek yogurt
1 cup(s)
Dried chia seeds
1 Tbsp
Mango
½ cup(s)
Strawberries
½ cup(s)
Strawberries
2 medium
Maple syrup
2 tsp
Ready-to-eat granola cereal

Instructions

Stir together yogurt and chia seeds in small bowl. Let stand 5 minutes.

Spoon ¼ cup yogurt mixture into each of 2 glasses. Layer each with half of mango, another ¼ cup of yogurt mixture, and half of sliced strawberries. Drizzle evenly with maple syrup. Sprinkle evenly with granola and garnish each with a whole strawberry. Recipe may be doubled.
