This unique way of filling, folding, and cooking a tortilla is extremely versatile and is so fun to customize. Go Italian with sliced chicken, arugula, tomato sauce, and mozzarella cheese. Try it for dessert with sliced bananas, creamy peanut butter, shaved chocolate, and coconut. Or use it as a tasty way to reinvent leftovers by using them to fill the four quadrants. Swap in a sheet of nori for the tortilla, if you prefer.

Ingredients

8" low carb flour tortilla

2½ oz, burrito-size (about 9 ½ inches)

Fat free refried beans

¼ cup(s)

Egg

1 large egg(s), scrambled with cooking spray, salt, and pepper

Cherry tomatoes

2 medium, diced

Scallions

1 small, sliced

Reduced fat cheddar cheese

¼ cup(s), shredded, sharp variety

Cooked red bell pepper

¼ cup(s)

Cooked onion

¼ cup(s), strips

Cooking spray

2 spray(s)

Instructions

  1. Place tortilla on a work surface. Looking at it like a clock, cut from center to 6 o'clock. Spread beans in the lower left quadrant (from 6 to 9 o'clock). Place the scrambled egg on tortilla in upper left quadrant (from 9 to 12 o'clock) and top with tomatoes and scallions. Place the cheese on the upper right quadrant (from 12 to 3 o'clock). Place peppers and onions in lower right quadrant (from 3 to 6 o'clock). Fold tortilla clockwise by folding beans over egg, egg over cheese, and cheese over peppers and onions.
  2. Coat a small nonstick skillet with cooking spray. Heat over medium. Add the folded tortilla to the skillet and cook until the tortilla is browned, the cheese is melted, and the fillings are heated through, 1 to 2 minutes per side.
  3. Serving size: 1 tortilla
