These burgers are a delicious riff on Buffalo chicken wings. The patties get brushed with zesty barbecue sauce and topped with crumbled blue cheese. If you like your food spicy, give the lettuce and tomato a few dashes of hot sauce before you dig in. Feel free to save half a bun by serving the burgers open-face style, or lose the bread entirely by sandwiching the patties and all the fixings between two crisp lettuce leaves.

Dried plain breadcrumbs

Instructions

  1. Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium-high, or prepare medium-high fire in charcoal grill.
  2. In small bowl, combine barbecue sauce and hot sauce. In medium bowl, combine chicken, scallions, celery, breadcrumbs, garlic, and salt. Using wet hands (to prevent meat from sticking), form chicken into 4 (1⁄2-inch-thick) patties. Brush tops of patties with half of sauce.
  3. Transfer patties to grill, sauce-side down, and brush tops of patties with remaining sauce. Grill, turning once, until instant-read thermometer registers 165°F when inserted horizontally into patties, about 10 minutes. During last minute of cooking, grill rolls until lightly toasted.
  4. Build burgers with rolls, lettuce, patties, tomato slices, and cheese.
  5. Serving size: 1 burger
