The Basque region of northern Spain is home to delicious cuisine. Our chicken dish stars plenty of famous Basque ingredients, including chorizo, bell peppers, and smoked paprika.

Ingredients

Canned diced tomatoes

1 cup(s), fire-roasted variety with juice

Water

2 Tbsp

Tomato paste

1 Tbsp

Paprika

¾ tsp, smoked variety

Kosher salt

½ tsp

Black pepper

Uncooked onion

1 small, chopped

Celery

1 rib(s), medium, sliced

Chorizo

1¼ oz, (1/4 cup), chopped sausage

Uncooked boneless skinless chicken breast

12 oz, 2 (6-ounce) breasts

Bell pepper

1 item(s), small, small size, yellow variety, chopped

Yellow cornmeal

1½ tsp

Fresh thyme

2 tsp, leaves

Fresh basil

1 Tbsp, small leaves

Instructions

  1. Mix together tomatoes, water, tomato paste, paprika, salt, and black pepper in 2-quart slow cooker. Stir in onion, celery, and chorizo; top with chicken and bell pepper. Cover and cook until chicken and vegetables are fork-tender, 3–4 hours on High or 6–8 hours on Low.
  2. About 20 minutes before cooking time is up, slowly stir cornmeal into slow cooker. Cover and cook until mixture thickens. Serve sprinkled with thyme and/or basil.
  3. Per serving: 1 chicken breast and 1 1/4 cups vegetables with sauce
