Here's one of our favorite breakfast treats to enjoy to get our day started off right. You'll be more than satisfied until lunchtime. Most of the cook time is hands-off, so you can have it simmering while you get ready in the morning. Steel cut oats, also known as Irish oats, do take a while to cook, but their slightly chewy texture is well-worth the extra time and effort. All that's left to do is stir in the bananas, brown sugar, butter, vanilla extract, and low-fat milk. For less intense banana flavor, you can chop the bananas instead of mashing them.

¼ tsp, or to taste
Uncooked steel cut oats

Banana
2 medium, ripe, mashed
Packed brown sugar
1 Tbsp
Unsalted butter
2 tsp
Vanilla extract
½ tsp
1% low fat milk
¼ cup(s)
Chopped walnuts (unsalted, raw or dry roasted, no sugar added)

Instructions

Bring water and salt to a boil in a medium saucepan; stir in oats and return to a boil. Reduce heat to low and simmer, uncovered, stirring occasionally, until oats are tender, about 25 to 30 minutes; remove from heat. Gently stir in bananas, sugar, butter, and vanilla; stir in milk. Serve oatmeal topped with walnuts.
