Our crumb cake is the perfect after-dinner or brunch treat. You'll find yourself reaching for a piece any time of day. It whips up in minutes thanks to the use of packaged banana cake mix, but you can use homemade cake mix if you have a favorite recipe. Be sure that you stir the batter for quite a bit of time (we suggest about 50 strokes) to get the perfect texture; it's well worth it here. The topping for the crumb cake is made with mashed bananas, quick oats, brown sugar, and chopped walnuts for lots of savory crunch. One of the most difficult parts will be letting it cool for about 20 minutes before digging right in.

Unprepared banana cake mix

14 oz

Mineral water

1 fl oz

Unsweetened applesauce

¼ cup(s)

Egg whites

Banana

1 large, ripe, mashed

Uncooked quick oats

½ cup(s)

Packed brown sugar

½ cup(s)

Chopped walnuts

¼ cup(s)

Instructions

  1. Preheat oven to 375ºF. Coat an 8-inch square pan with cooking spray.
  2. Combine cake mix, water, applesauce and egg whites in a large bowl. Stir about 50 strokes with a spoon until mix is moistened; pour into prepared pan.
  3. Combine banana, oats, sugar and walnuts in a medium bowl and mix well; drop by teaspoonfuls over cake batter.
  4. Bake until center is puffed and set, about 30 minutes. Allow to cool for about 20 minutes before cutting into 12 pieces.
