This delicious, filling wrap is the perfect breakfast for one. While you're cooking the bacons and tomatoes together, cook the eggs in another small skillet until they're set, then combine everything in a warmed flour tortilla. It doesn't get much easier than that. This wrap is one of our favorite things to make to take on the go before a busy morning. Simply enclose the wrap in aluminum foil, cut in half, and your breakfast is ready for the road. Feel free to omit the bacon if you want to go vegetarian, or include other ingredients, like avocados, potatoes, or fresh herbs, if you're looking to make some adjustments.

Low carb, high fiber tortilla wrap

1 tortilla(s), warmed

Uncooked Canadian bacon

2 slice(s)

Cherry tomatoes

5 medium, halved

Egg

1 large egg(s)

Fat free skim milk

1 Tbsp

Table salt

Spray medium skillet with nonstick spray and set over medium heat. Add bacon and tomatoes, cut side down, and cook, turning bacon once, until bacon is well browned and tomatoes have softened, about 4 minutes. 2 Meanwhile, whisk together egg, milk, salt, and pepper in small bowl. Heat oil in small nonstick skillet over medium heat. Add egg mixture and cook, stirring frequently, just until set, 2–3 minutes.

Fill wrap with bacon, tomatoes, egg, and spinach.
