You gotta love an easy, satisfying lunch or appetizer recipe that comes together in under 10 minutes. Plus, bonus, you only need 6 ingredients to make these roll-ups. Simply mix the duck, hoisin sauce, and scallions together, then spread the mixture on whole-wheat tortillas. Top with sweet red peppers and peppery arugula, and your roll-ups are ready to go. That's it! Packaged cooked duck breast is found in specialty food stores. If it comes with the skin on, be sure to remove it before shredding the duck. And if you don't like arugula, feel free to try this recipe with spinach or mixed greens instead.

Ingredients

Cooked skinless domestic duck

16 oz, or chicken breast, shredded (2 cups)

Hoisin sauce

¼ cup(s)

Scallions

2 medium, thinly sliced

Whole-wheat tortilla

4 tortilla(s), medium, (7-inch each) warmed

Red bell pepper

½ small, thinly sliced

Arugula

8 leaf/leaves, trimmed

Instructions

  1. Stir together the duck, hoisin, and scallions in a medium bowl.
  2. Lay the tortillas on a work surface and spread evenly with the duck mixture. Top evenly with the bell pepper and arugula. Roll up the tortillas and cut in half. Yields 1 roll-up per serving.
