Asian Crab and Shrimp Salad

This easy, 15-minute salad is a fantastic mix of colors and flavors. It features shrimp that's been marinated with a simple mixture of lime zest, lime juice, and soy sauce. Toss in the rest of the ingredients, which include bok choy, bean sprouts, yellow and sweet red peppers, mushrooms, and crabmeat, and just toss to combine. Your gorgeous twist on a traditional salad is ready to go. Cook's tip: If you can't find bok choy, you can use a combination of crisp lettuce, such as romaine or iceberg, with some finely sliced white cabbage. Also, you can use your favorite type of mushroom instead of button, as well as any fresh herbs you have on hand instead of the cilantro.

Lime zest
1 tsp
Fresh lime juice
2 Tbsp
Less sodium soy sauce
2 Tbsp
Shallot
2 medium, finely sliced
Uncooked shrimp
12 oz, large, cooked
Baby bok choy
3 head(s), torn into pieces
Lettuce
½ head(s), medium, shredded
Uncooked bean sprouts
1 cup(s)
Yellow bell pepper
1 medium, finely sliced
Red bell pepper
1 medium, finely sliced
Button mushrooms
1 cup(s), chopped or sliced, sliced
Cilantro
3 Tbsp, fresh, roughly-chopped
Canned crabmeat
6 oz, drained
Table salt
⅛ tsp, or to taste
Black pepper
⅛ tsp, freshly ground, or to taste

In a large salad bowl, mix together lime zest, lime juice and soy sauce; add shallots. Pat shrimp dry with a paper towel; add to salad bowl. Stir gently and marinate for about 10 minutes.

Add remaining ingredients to salad bowl; toss together and serve.
