Pears and Gorgonzola cheese are a favorite combination in Italian cuisine, especially after a meal. Why not serve this elegant salad as a last course?

Ingredients

pear(s)

1 medium, thinly sliced

fresh lemon juice

1 Tbsp

arugula

1 bunch(es), cleaned

gorgonzola cheese

2½ oz, about 1⁄3 cup, crumbled

fat free vegetable broth

¼ cup(s), reduced-sodium

olive oil

4 tsp

white wine

½ fl oz, or cider vinegar

garlic clove(s)

1 medium clove(s), bruised

black pepper

tsp, freshly ground, or to taste

Instructions

  1. Combine the pear with the lemon juice in a small bowl; toss to coat. Arrange the arugula and pear slices on a platter.
  2. To prepare the dressing, combine the cheese, broth, oil, vinegar, garlic, and pepper in a small bowl; let stand at least 5 minutes to allow the flavors to blend, then remove the garlic. Yields 1 1/2 cups per serving.

Notes
