Arugula-Pear Salad with Gorgonzola Dressing

Pears and Gorgonzola cheese are a favorite combination in Italian cuisine, especially after a meal. Why not serve this elegant salad as a last course?
pear(s)1 medium, thinly sliced
fresh lemon juice1 Tbsp
arugula1 bunch(es), cleaned
gorgonzola cheese2 ½ oz, about 1/3 cup, crumbled
vegetable broth¼ cup(s), reduced-sodium
olive oil4 tsp
white wine½ fl oz, or cider vinegar
garlic clove(s)1 clove(s), medium, bruised
black pepper⅛ tsp, freshly ground, or to taste
- Combine the pear with the lemon juice in a small bowl; toss to coat. Arrange the arugula and pear slices on a platter.
- To prepare the dressing, combine the cheese, broth, oil, vinegar, garlic, and pepper in a small bowl; let stand at least 5 minutes to allow the flavors to blend, then remove the garlic. Yields 1 1/2 cups per serving.
