Pears and gorgonzola cheese are a favorite combination in Italian cuisine, especially after a meal. Why not mix things up a bit and serve this elegant salad as a last course? You and your guests will love this twist on the traditional dinner party. The best part is that the salad and the dressing can be made ahead of time, refrigerated for up to 8 hours, then combined just before serving. Also, bruising the garlic helps release its flavor. Here’s how to do it: Place a peeled clove on a cutting board and flatten it slightly with the side of a large knife.

Ingredients

Pear

1 medium, thinly sliced

Fresh lemon juice

1 Tbsp

Arugula

1 bunch(es), cleaned

Gorgonzola cheese

2½ oz, about 1⁄3 cup, crumbled

Vegetable broth

¼ cup(s), reduced-sodium

Olive oil

4 tsp

White wine

½ fl oz, or cider vinegar

Garlic

1 clove(s), bruised

Black pepper

tsp, freshly ground, or to taste

Instructions

  1. Combine the pear with the lemon juice in a small bowl; toss to coat. Arrange the arugula and pear slices on a platter.
  2. To prepare the dressing, combine the cheese, broth, oil, vinegar, garlic, and pepper in a small bowl; let stand at least 5 minutes to allow the flavors to blend, then remove the garlic. Yields 1 1/2 cups per serving.
