Arugula-pear salad with gorgonzola dressing
1 medium, thinly sliced
Fresh lemon juice
1 bunch(es), cleaned
2½ oz, about 1⁄3 cup, crumbled
Fat free vegetable broth
¼ cup(s), reduced-sodium
½ fl oz, or cider vinegar
1 medium clove(s), bruised
⅛ tsp, freshly ground, or to taste
- Combine the pear with the lemon juice in a small bowl; toss to coat. Arrange the arugula and pear slices on a platter.
- To prepare the dressing, combine the cheese, broth, oil, vinegar, garlic, and pepper in a small bowl; let stand at least 5 minutes to allow the flavors to blend, then remove the garlic. Yields 1 1/2 cups per serving.
