The calories are reduced thanks to using egg whites, low-fat buttermilk, and unsweetened applesauce. There's no special equipment needed, and all you have to do is stir everything together before letting the muffins bake away in the oven. If you can resist, try to let them cool completely before biting into one so they have time to set. You can use any dried fruit in these muffins; the recipe is very versatile. Feel free to try them with raisins, apples, or dates, for example.

Dry oat bran

Unpacked brown sugar

Baking powder

Egg whites

1% low fat buttermilk

Molasses

Dried apricot halves

¾ cup(s), finely chopped

Instructions

  1. Preheat oven to 450°F (230°C). Spray a 12-muffin tin; set aside.
  2. In a large bowl, mix oat bran, brown sugar and baking powder. Make a well in the center of the mixture.
  3. In another bowl, beat egg whites until foamy. Stir in buttermilk and molasses. Add buttermilk mixture to oat bran mixture and stir just until moistened. Fold in applesauce and apricots.
  4. Spoon batter into muffin tin, filling each cup to the top. Bake until golden brown, 10 to 12 minutes. Remove from oven and cool 5 minutes. Remove muffins from tin and cool on a wire rack.
