We just how how easily and quickly these hearty, sweet muffins come together; you can have a batch ready in just about 20 minutes. The calories are reduced thanks to using egg whites, low-fat buttermilk, and unsweetened applesauce. There's no special equipment needed, and all you have to do is stir everything together before letting the muffins bake away in the oven. If you can resist, try to let them cool completely before biting into one so they have time to set. You can use any dried fruit in these muffins; the recipe is very versatile. Feel free to try them with raisins, apples, or dates, for example.
