Amaretti are small dome-shaped Italian cookies that are bursting with almond flavor; they are often served as an after-dinner treat with coffee or dessert wine. Here, the cookies are crushed and then top a hearty filling of cinnamon, pears, cranberries, and lemon juice. They really help put this delicious crumble over the top, which will satisfy you and your guests; you can't help but keep going back for more. Amaretti cookies can be found in the gourmet section of most supermarkets and in specialty food stores. Also be sure to check for them online. If amaretti cookies are not available, reduced-fat gingersnap cookies make a nice alternative.

Unsalted butter

1 Tbsp, melted

Instructions

  1. Preheat the oven to 450°F. Spray a 1 1⁄2-quart baking dish with nonstick spray.
  2. To make the filling, combine the sugar, flour, cinnamon, and salt in a large bowl. Add the pears, cranberries, and lemon juice; toss to mix well. Spoon into the baking dish. Sprinkle with the amaretti and drizzle with the melted butter. Bake until the pears are tender and the mixture is bubbly, about 35 minutes. Let cool on a rack about 20 minutes. Serve warm or at room temperature. Yields 1⁄4 of crumble per serving.
