This French-inspired bean and sausage meal comes together in under 20 minutes so you can satisfy big appetites in a hurry. The beans give the dish ample fiber and the sausage delivers protein—a one-two punch that will keep you feeling full for hours. We suggest you rinse your beans before using them to help cut down on the sodium. This entrée pairs deliciously with a salad of mixed greens and a light and simple vinaigrette. If you're feeling particularly hungry, feel free to add a slice or two of a fresh French baguette. Be sure to save any leftovers as the flavors in this dish will deepen with time.

Cooking spray

2 spray(s), or enough to coat skillet

Onion

1 medium, chopped

Garlic

1 clove(s), minced

Low-fat sausage

8 oz, smoked variety, sliced 1/4-inch thick

Dried thyme

¼ tsp

Chicken broth

¾ cup(s)

Canned great northern beans

30 oz, rinsed and drained

Tomato paste

1½ Tbsp

Dried plain breadcrumbs

Instructions

  1. Preheat broiler.
  2. Coat a nonstick ovenproof skillet with cooking spray and heat. Add onion, garlic and kielbasa and sauté until onion is tender, about 3 to 4 minutes. Add thyme, broth, beans and tomato paste; simmer 10 minutes.
  3. Sprinkle bread crumbs over beans. Place skillet under broiler until bread crumbs are browned, about 30 seconds. Yields about 1 3/4 cups per serving.
