Sweet Potato Fries

Preheat oven to 400ºF. Coat a nonstick baking sheet with cooking spray. Mix potato with egg white in a small bowl and place on baking sheet in a single layer. Bake until cooked through and slightly crisp, about 15 to 20 minutes.
