Notes

Preheat oven to 350°F. Coat a small baking dish with cooking spray. Core apple but don’t cut through to bottom; peel away skin from top third of apple. Sprinkle apple cavity with 1/4 teaspoon of cinnamon. Place apple in prepared baking dish and spray with cooking spray; bake until apple is very tender, about 45 minutes (loosely cover with aluminum foil during baking if apple becomes overly brown). Meanwhile, stir together remaining cinnamon, ricotta and Splenda; spoon ricotta mixture into baked apple. (TIME-SAVER TIP: You can bake extra apples and store them in the refrigerator for up to 3 days. Microwave on HIGH power for 1 minute to reheat.)
