Succulent and sweet, figs are a staple of Mediterranean fare. If you haven't tried these purple or black teardrops, you should.

When shopping, place figs with skin that is smooth and unbroken, and feel soft into your grocery basket. Avoid figs that are mushy, wet, or broken.  Once home, store in a shallow bowl covered with plastic wrap. 

When it is time to use the fig, either to eat plain or use in the recipes below, wash with cool water and pat dry. Enjoy!
