Tomato & nectarine salad with pumpkin seeds
450 g, mixed
3 medium, pitted and cut into wedges
Lime Juice, Fresh
Calorie controlled cooking spray
4 medium, trimmed and thinly sliced
- Place the tomatoes and nectarines in a large mixing bowl. Drizzle with the oil and lime juice. Season to taste, then gently combine with your hands.
- Mist a medium frying pan with cooking spray and place over a medium-high heat. Add the pumpkin seeds and cook for 10 minutes, stirring frequently, until they start to brown. Transfer to a bowl and season lightly. Set aside.
- Arrange the rocket on a large serving plate and spoon the tomato mixture on top. Add the spring onions and sprinkle over the toasted pumpkin seeds. Serve immediately.
