Bursting with texture and colour, this fresh summer salad is perfectly balanced with bitter leaves, sweet fruit and crunchy seeds packed with nutrients

Ingredients

Tomato

450 g, mixed

Nectarine

3 medium, pitted and cut into wedges

Olive Oil

2 tablespoon(s)

Lime Juice, Fresh

2 tablespoon(s)

Calorie controlled cooking spray

Pumpkin Seeds

3 tablespoon(s)

Rocket

60 g

Spring Onions

4 medium, trimmed and thinly sliced

Instructions

  1. Place the tomatoes and nectarines in a large mixing bowl. Drizzle with the oil and lime juice. Season to taste, then gently combine with your hands.
  2. Mist a medium frying pan with cooking spray and place over a medium-high heat. Add the pumpkin seeds and cook for 10 minutes, stirring frequently, until they start to brown. Transfer to a bowl and season lightly. Set aside.
  3. Arrange the rocket on a large serving plate and spoon the tomato mixture on top. Add the spring onions and sprinkle over the toasted pumpkin seeds. Serve immediately.
