filling and delicious salad that goes beautifully with grilled meats. Make it the day before if you can, as the flavour improves with time.

Ingredients

Puy lentils, dry

250 g

Lime Juice, Fresh

1 tablespoon(s)

Lemon Juice, Fresh

1 tablespoon(s)

White Wine Vinegar

1 tablespoon(s)

Red onion

1 small, thinly sliced into rings

Extra virgin olive oil

2 tablespoon(s)

Spice Pots Goan Blend

1 teaspoon(s), level

Garlic

1 clove(s), crushed

Mango Chutney

2 tablespoon(s), heaped

Coriander, fresh

1 tablespoon(s), chopped

Cherry Tomatoes

250 g, halved

Spinach

85 g

Instructions

  1. Cook the lentils according to the packet instructions then drain thoroughly.
  2. Meanwhile, in a salad bowl mix together the lime juice, lemon juice, vinegar and a pinch of salt, then add the sliced onions – after a few minutes they will soften and turn pink.
  3. Whisk together the oil, Goan spices, garlic and chutney, then toss into the onions with the cooled lentils, coriander, tomatoes, spinach and plenty of seasoning. Completely delicious.
