Omelettes are a great speedy light meal and a good way to use up veg!
Egg, whole, raw
3 medium, raw
2 tablespoons, level
Calorie controlled cooking spray
1 large, sliced
- Beat the eggs, milk and tomato puree together. Season with a little salt and pepper.
- Heat a nonstick frying pan and spray with cooking spray. Add half the egg mixture and cook for 3-4 minutes, pushing the cooked mixture from the sides to the middle of the pan, so that the uncooked egg flows over the surface and cooks. Arrange half the sliced tomatoes and a few basil leaves on top, fold in half, then serve at once, garnished with a few more basil leaves. Repeat with the remaining egg mixture, tomato and basil.
