Keep your eyes peeled for sweetcorn this Summer – the in-season fresh stuff is only around for a short time. But if you do miss out on those golden husks, don’t worry. Frozen and tinned sweetcorn are budget-friendly alternatives that are just as delicious.

Ingredients

WW White Wraps

Calorie controlled cooking spray

4 spray(s)

Sweetcorn, tinned, drained

150 g, frozen, thawed

Chilli, green or red

1 individual, finely diced

Coriander, fresh

2 tablespoon(s), chopped

Red onion

1 small, finely diced

Lime Juice, Fresh

25 ml

Honey

1 teaspoon(s), level

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6, and line a large baking tray with baking paper. Mist the wraps with cooking spray, cut into triangles and arrange in a single layer on the prepared baking tray. Bake for 6-8 minutes, or until crisp and golden.
  2. Meanwhile, combine the thawed frozen sweetcorn, red chilli, chopped coriander and red onion in a small bowl.
  3. Whisk the honey with the lime juice until combined, then drizzle over the sweetcorn mixture and toss to coat. Season to taste and serve with the tortilla chips.
