Sweet potato & goat's cheese rösti

Great to have to hand in the freezer for brunches, lunches and light suppers, these versatile röstis combine the sweetness of sweet potato with the tang of goat’s cheese.


Ingredients
Sweet potato, raw
1000 g, peeled and grated coarsely
Calorie controlled cooking spray
4 spray(s)
Red onion
1 medium, finely diced
Garlic
2 clove(s), crushed
Goat's Cheese
250 g, crumbled
Coriander, fresh
4 tablespoon(s), chopped
Plain White Flour
40 g
Egg, whole, raw
2 medium, raw, beaten

Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the grated sweet potato in a large bowl and set aside.

Mist a large nonstick frying pan with cooking spray and set over a medium heat. Fry the onion and garlic for 3-4 minutes until starting to soften.

Add the onion mixture to the bowl of sweet potato, followed by the goat’s cheese, coriander, flour and eggs. Mix to combine, then season well and form the mixture into 16 röstis, squeezing to shape.
