Sweet potato & goat's cheese rösti

Great to have to hand in the freezer for brunches, lunches and light suppers, these versatile röstis combine the sweetness of sweet potato with the tang of goat’s cheese.

Ingredients

Sweet potato, raw

1000 g, peeled and grated coarsely

Calorie controlled cooking spray

4 spray(s)

Red onion

1 medium, finely diced

Garlic

2 clove(s), crushed

Goat's Cheese

250 g, crumbled

Coriander, fresh

4 tablespoon(s), chopped

Plain White Flour

40 g

Egg, whole, raw

2 medium, raw, beaten

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the grated sweet potato in a large bowl and set aside.
  2. Mist a large nonstick frying pan with cooking spray and set over a medium heat. Fry the onion and garlic for 3-4 minutes until starting to soften.
  3. Add the onion mixture to the bowl of sweet potato, followed by the goat’s cheese, coriander, flour and eggs. Mix to combine, then season well and form the mixture into 16 röstis, squeezing to shape.

Notes

You can freeze any leftover hard goat’s cheese for up to 3 months. Just defrost and use another time. For 4 people, mist a nonstick baking tray with calorie controlled cooking spray and add 8 of the rösti. Mist with cooking spray and bake for 20-25 minutes, until golden brown. Serve 2 röstis per person with a watercress and fresh tomato salad. The SmartPoints will remain the same. To freeze, layer the remaining 8 röstis between pieces of baking paper and store in an airtight container in the freezer for up to 3 months. Defrost the röstis and cook and serve as per ‘to serve’ instructions.
