Steak salad with mushrooms

Beef fillet steak, lean, raw
Vegetable stock cube(s)
Light Feta Cheese
- Wash and dry the mushrooms the cut into slices. Peel the onion and cut into fine slices. Wash the salad, then cut into bite-sized pieces.
- Heat 1 teaspoon of oil in a pan over a high heat and fry the steak for 5-6 minutes on each side. Season and set aside. Cover to keep warm.
- Heat the remaining oil in the frying pan, fry the mushrooms with the sliced onion and cook for 5 minutes, season then set aside.
- For the dressing dissolve the stock cube in 2 tbsp hot water. In a bowl combine the mushrooms, onions, lettuce and the salad dressing, mix to combine. Cut the steak into strips and add to the salad. Sprinkle the feta on top, then divide between two plates.
