  1. Cook the pasta to pack instructions, or until al dente. Drain, reserving 100ml of the cooking water.
  2. Meanwhile, set a large nonstick frying pan over a medium heat and mist with cooking spray. Add the bacon, mushrooms, spring onion and garlic, and cook for 5 minutes, until softened. Remove and discard the garlic.
  3. In a mixing bowl, combine the soft cheese and egg, then stir in the bacon mixture, the milk, half of the Parmesan and the parsley. Season to taste. Put the spaghetti in a pan set over a low heat, add the cheese mixture and heat for 2-3 minutes, stirring, until the mixture has thickened. Add a little of the reserved pasta water to form a sauce.
  4. Divide the spaghetti between 4 plates and serve topped with the remaining Parmesan.
