It's easy to make this refreshing sorbet with juicy melon and a hint of ginger.

Cantaloupe Melon

500 g, (weighed without skin or seeds)

Lemon Juice, Fresh

1 tablespoon(s)

Root Ginger

2 teaspoon(s), fresh

No Added Sugar Fruit Juice Squash, undiluted

300 ml, apple flavoured, make up with water

Artificial sweetener

6 tablespoon(s)

Cantaloupe Melon

1 slice(s), medium, cut into tiny slivers, to decorate

  1. Cut the melon chunks and place them in a blender with the lemon juice, ginger, apple squash and sweetener. Blend until very smooth (you may have to do this in batches).
  2. Tip the mixture into an ice-cream maker and follow the manufacturer's instructions to freeze the mixture. Alternatively, tip into a freezer container and freeze for about 1 hour. Stir with a fork to break up the ice crystals, then freeze again for another hour. Repeat the stirring, then freeze until solid.
  3. Take the container from the freezer about 25 minutes before you wish to serve, so that you can break it up with a fork. Scoop into glasses or bowls and serve immediately, decorated with tiny slivers of melon.
