Porridge oats

Put the oats, pumpkin puree, dates, vanilla extract, cinnamon, ginger, chia seeds and maple syrup into a food processor and blitz until the mixture is finely chopped and starts to come together in a ball.

Add the pumpkin seeds and pulse them into the mixture for a couple of seconds - don't overdo it as you want them to retain a bit of their crunchy texture. Use your hands to roll the mixture into 18 x 20g balls, then store between layers of baking paper in an airtight container. The bites will keep in an airtight container in the fridge for up to 5 days, or frozen for up to 1 month.
