Carrot & coriander soup
This classic soup is comfort in a bowl.
3 medium, peeled and chopped
1 medium, chopped
Vegetable stock cube(s)
½ cube(s), 300ml stock
- Put the carrots and onion in a small pan with 300ml stock.
- Strip the coriander leaves from the stalks, then add the stalks to the pan. Bring to the boil. Reduce the heat and simmer for 20 minutes.
- Let cool slightly before blending. Season, stir in the coriander leaves and serve.
