6 medium, raw
Egg yolk, raw
1 medium
Kale, raw
100 g
Instructions
1
Preheat the oven to 200°C, fan 180°C, gas mark 6. Mist 6 large non-stick muffin-tray holes with cooking spray. Put the grated potato on a clean tea towel and squeeze out the excess liquid. Put in a small bowl and mix with the egg yolk. Season to taste.

Divide the potato mixture between the 6 muffin holes, spreading it up the sides. Mist with cooking spray and bake for 30-35 minutes, or until golden brown and just cooked through. Remove from the oven and reduce the oven temperature to 180°C, fan 160°C, gas mark 4.

Meanwhile, bring a pan of water to a boil, add the kale and cook for 4-5 minutes, or until just tender, then drain and pat dry on kitchen paper.
4
Divide the kale between the 6 potato nests and crack an egg into each one. Bake for 10-12 minutes, until the egg is just set, then serve.
