Ingredients

Rapeseed Oil

Pork loin chops

740 g

Onion

1 medium, finely chopped

Red pepper

1 medium, thickly sliced

Tinned Tomatoes

1 can(s), large

Tamarind paste

2 tablespoon(s)

Aubergine

1 medium

Green Beans

200 g, trimmed

Thai Fish Sauce

1½ tablespoon(s)

Chilli, green or red

1 individual, green, thinly sliced

Instructions

Heat the oil in a large saucepan over a medium-high heat. Cook the pork, turning, in batches, for 3 minutes or until browned. Transfer to a plate.

Cook the onion, capsicum and 1 tablespoon water in same pan, covered, for 5 minutes or until softened. Add the tomatoes, tamarind, aubergine, pork and any juices and bring to the boil. Reduce heat and simmer, covered, for 1 hour.

Add the beans and cook, covered, for 15 minutes or until pork and vegetables are tender. Add fish sauce and stir to combine. Serve sprinkled with chilli.
