Sweet, crunchy and the colour of sunshine, fresh tropical pineapple is guaranteed to raise a smile. Here, it’s caramelised to bring out even more sweetness, then spooned over waffles.

Ingredients

Desiccated Coconut

1 tablespoon(s)

Low Fat Spread

2 teaspoon(s), level

Pineapple

700 g, finely diced

Maple Syrup

1 tablespoon(s)

Lime Juice, Fresh

1 tablespoon(s)

Toasting waffle

4 individual

0% fat natural Greek yogurt

4 tablespoon(s)

Instructions

  1. Toast the coconut in a small dry frying pan over a medium heat for 1-2 minutes, until fragrant and golden. Remove from the heat and set aside.
  2. Melt the low-fat spread in a large nonstick frying pan over a medium-high heat. Cook the pineapple, stirring occasionally, for 3-4 minutes or until most of the liquid evaporates, then add the maple syrup. Cook, stirring, for another 2 minutes until the pineapple is lightly golden, then stir in the lime juice and remove from the heat.
  3. Toast the waffles to pack instructions, then divide between plates and serve topped with the caramelised pineapple, yogurt and toasted coconut.
