Sweet, crunchy and the colour of sunshine, fresh tropical pineapple is guaranteed to raise a smile. Here, it’s caramelised to bring out even more sweetness, then spooned over waffles.
Low Fat Spread
2 teaspoons, level
700 g, finely diced
Lime Juice, Fresh
0% fat natural Greek yogurt
- Toast the coconut in a small dry frying pan over a medium heat for 1-2 minutes, until fragrant and golden. Remove from the heat and set aside.
- Melt the low-fat spread in a large nonstick frying pan over a medium-high heat. Cook the pineapple, stirring occasionally, for 3-4 minutes or until most of the liquid evaporates, then add the maple syrup. Cook, stirring, for another 2 minutes until the pineapple is lightly golden, then stir in the lime juice and remove from the heat.
- Toast the waffles to pack instructions, then divide between plates and serve topped with the caramelised pineapple, yogurt and toasted coconut.
