Ingredients

Chilli, green or red

1 individual, deseeded and sliced

Carrots, raw

1 medium, diced

Onion

1 medium, diced

Garlic

1 clove(s), crushed

Olive Oil

1 teaspoon(s)

Tomato Purèe

1 tablespoon(s), level

Tinned Tomatoes

1 can(s), small

Wholewheat Pasta, dry

70 g, penne

Tomato

100 g, cherry, halved

Oregano, Dried

1 teaspoon(s), level

Basil, fresh

1 tablespoon(s), chopped

Vegetarian parmesan style hard cheese

1 tablespoon(s), grated

Instructions

  1. Heat the oil in a nonstick pan over medium-high heat. Cook the chilli, garlic and onion for 3-4 minutes, stirring frequently. Add the tomato puree and tinned tomatoes. Sauté for 5 minutes. Meanwhile, cook the pasta to pack instructions.
  2. Add the cocktail tomatoes to the sauce and bring to a boil. Season with oregano, salt and pepper. Drain the penne and serve with the sauce all'arrabbiata. Garnish with fresh basil and cheese.

Notes

If children are eating with you or you don't want the pasta to be too spicy, just halve the amount of chilli, cook them briefly and remove from the sauce.
