Classic spaghetti Bolognese

Extra lean beef mince (5% fat), raw400 g
Onion(s)1 medium, finely chopped
Mushrooms200 g, sliced
Carrots, raw200 g, halved lengthways and thinly sliced
Tinned Tomatoes800 g, 2x 400g
Tomato Purèe1 tablespoons, level
White pasta, dry240 g, spaghetti
Basil, fresh3 teaspoons, to serve
Dried Mixed Herbs1 teaspoons
- Heat a large nonstick pan over a medium-high heat and mist with cooking spray. Add the mince and cook for 5-6 minutes. Add the onion, mushrooms and carrots and cook for a further 4-5 minutes, until the mince is browned and the vegetables are starting to soften.
- Stir in the tomatoes, tomato purée and dried herbs. Season and bring to the boil then reduce the heat and simmer for 20-25 minutes, or until the sauce has thickened.
- Meanwhile, cook the pasta to pack instructions, then drain.
- Serve the pasta topped with the meat sauce and basil leaves.
