Served with a mustard-mayo dip, these bite-sized croquettes are light and moreish

Ingredients

Potatoes, Raw

350 g, cut into medium chunks

Semi Skimmed Milk

1 tablespoon(s)

Asda Premium Lean Ham

70 g, finely chopped

Peas, frozen, boiled

70 g, thawed

Parsley, fresh

15 g, leaves finely chopped

Lemon

½ medium, zest and juice of

Plain White Flour

30 g

Egg, whole, raw

1 large, raw

Tesco Ingredients Panko Breadcrumbs

Vegetable Oil

3 tablespoon(s)

Dijon Mustard

1 teaspoon(s), heaped

Reduced Fat Mayonnaise

0% fat natural Greek yogurt

Instructions

  1. Cook the potatoes in a large pan of salted water for 15 minutes or until just tender. Drain, return to the pan and mash with the milk. Season and stir in the ham, peas, parsley, lemon zest and juice. Chill for 1 hour.
  2. Shape the potato mixture into 16 croquettes. Tip the flour onto a plate and season. Lightly beat the egg in a shallow bowl. Put the breadcrumbs into another bowl. Coat the croquettes first in flour, then egg, then breadcrumbs.
  3. Heat half the oil in a small frying pan over a medium-high heat. Fry half the croquettes for 4-5 minutes, turning, until golden. Using a slotted spoon, transfer to a plate lined with kitchen paper. Repeat with the remaining oil.
  4. Combine the dip ingredients in a small bowl. Season with black pepper. Serve the croquettes hot with the dip alongside.

Notes

You could also serve these as a lunch for 4 with a crisp green salad.
