Pasta salad with vinaigrette

This tossed pasta-salad marriage turns just 100g of pasta (lentil pasta for extra protein and fibre) into something hearty. Top with feta for lots of tang.


Ingredients
Yellow lentil pasta
100 g, penne
Salad leaves
150 g
Cherry Tomatoes
150 g, halved
Red onion
½ medium, sliced
Light feta cheese
60 g, crumbled
Olive Oil
1½ tablespoon(s)
Red wine vinegar
1½ tablespoon(s)
Dijon Mustard
1 teaspoon(s), heaped
Oregano, Dried
¼ teaspoon(s), level
Instructions

Cook the pasta to pack instructions, drain and rinse with cold water.

In a large bowl whisk together the dressing ingredients, season, then add the cooked pasta, lettuce, tomatoes and onion. Toss to combine, then top with the feta and serve.
