Oven-roasted salmon & asparagus

Ingredients
Asparagus, raw

Olive Oil

Calorie controlled cooking spray
4 spray(s)
Salmon, raw
8 fillet(s), medium
Ground Cumin
¼ teaspoon(s), level
Garlic powder
¾ teaspoon(s), level
Paprika
½ teaspoon(s), level

Preheat the oven to 220°C, fan 200°C, gas mark 7. Put the asparagus on a large baking tray, drizzle over the olive oil and scatter over the lemon zest. Season and toss together to coat.

Mist another baking tray with cooking spray and arrange the salmon fillets on top. In a small bowl, combine the ground cumin, garlic powder and smoked paprika, then season to taste. Sprinkle the spice mix over the salmon.

Put the asparagus on the lower rack of the oven and the salmon on the upper rack. Roast for 10-12 minutes until the asparagus is tender and the salmon flakes when tested with a fork. Divide between plates and serve.
