Moroccan spiced lentil stew

A comforting one-pot stew thats perfect for wintry nights. With nourishing ingredients such as fibre-rich lentils and packed full of veggies.

Olive Oil

1 medium, chopped
Garlic
2 clove(s), grated
Bay leaf, dry
1 leaf/leaves
Cumin seeds
1 tablespoon(s), level
Ground coriander
1 tablespoon(s), level
Paprika
2 teaspoon(s), level, smoked
Tinned Tomatoes
1 can(s), large
Green or Brown Lentils, dry
150 g
Carrots, raw
3 medium, chopped
Celery, Raw
3 stick(s), chopped
Vegetable stock cube
2 cube(s), 1 litre
Lemon Juice, Fresh
2 tablespoon(s)
Parsley, fresh
1 tablespoon(s), chopped,
Coriander, fresh
1 tablespoon(s), chopped,
Instructions

Heat a casserole over a medium heat, add the oil, then fry the onion and garlic for 5-10 minutes until soft. Add the spices and season with salt and pepper, cook for a further minute.

Add the tomatoes, stir to break them up and cook for 5 minutes, then add the lentils, carrots, celery and stock. Bring to a simmer, season, and cook for 20-25 minutes until the lentils are tender.

Remove from the heat, add in the lemon juice & herbs, then ladle into bowls, top with the extra herbs.
