Mini sweetcorn & feta fritters

Ingredients
Plain White Flour
50 g
Baking powder
½ teaspoon(s), level
Egg, whole, raw
2 medium, raw
Sweetcorn, tinned, drained
165 g
Sunflower Oil
1 tablespoon(s)
Light feta cheese
50 g
0% fat natural Greek yogurt
125 g
Chives, Fresh
3 tablespoon(s), snipped
Instructions

Put the flour, baking powder, eggs and ¼ of the sweetcorn in a food processor and whizz to a smooth batter. Transfer to a bowl, then stir in the rest of the corn and season to taste.

Heat a non-stick frying pan over a medium-low heat. Use kitchen paper and a little of the oil to grease the pan then, in batches, cook tablespoonfuls of the mixture for 2 minutes on each side until golden and cooked through. Repeat, oiling the pan in between each batch until you have 18 fritters. Set aside and keep warm.

Put the feta, yogurt and half the chives into a food processor and whizz to a smooth sauce.

To serve, put the fritters on a serving plate and top each with some of the yogurt mixture. Scatter over the rest of the chives to garnish. The fritters can be frozen for up to 2 months.
