This simple but stunning dessert is just the thing when you want a little something special to round off your meal.

Mango

Raspberries

250 g

Egg white, raw

Preheat the oven to 190°C, fan 170°C, gas mark 5. Peel, stone and chop the mangoes, then mix them with the raspberries. Share the fruit between the ramekins or heatproof dishes and place them on the baking sheet.

Whisk the egg whites in the mixing bowl until they hold their shape; then whisk in the sugar until stiff and glossy. Share between the dishes and bake for 6-7 minutes until golden brown. Serve immediately.
