- Preheat the oven to 200°C, fan 180°C, gas mark 6. Cook the potatoes in a pan of boiling water for 15 minutes until just tender, then drain and lightly crush with the back of a spoon – you don’t want them to fall apart completely.
- Put the potatoes onto a baking tray and mist with cooking spray. Season and bake for 20 minutes. Mist a small nonstick frying pan with cooking spray and fry the bacon medallions over a medium heat for 3-4 minutes.
- Add the garlic and cook for another 2 minutes then remove from the heat. Add the bacon and garlic to the baking tray, along with the rosemary and toss to combine. Bake for a final 5 minutes until crisp and golden.
