Grilled fruit salad with burnt sugar & lime yogurt
Light Brown Sugar
0% fat natural Greek yogurt
1 medium, 1 tsp of zest, plus extra zest and lime wedges, to serve
400 g, sliced
1 medium, cheeks removed and cut into quarters
2 medium, peeled and cut in half lengthways
- Heat the brown sugar and 2 tsp cold water in a pan over a low heat until the sugar has dissolved. Increase the heat to medium-high, don't stir until the mixture caramelises, remove and allow to cool.
- Mix the yogurt, lime zest and caramel together and chill.
- Barbecue or griddle the fruit until lightly charred. Serve with a squeeze of lime juice and the yogurt.
