Grilled fruit salad with burnt sugar & lime yogurt

Ingredients

Light Brown Sugar

3 teaspoon(s)

0% fat natural Greek yogurt

280 g

Lime

1 medium, 1 tsp of zest, plus extra zest and lime wedges, to serve

Pineapple

400 g, sliced

Mango

1 medium, cheeks removed and cut into quarters

Kiwi Fruit

2 medium, peeled and cut in half lengthways

Strawberries

8 individual

Instructions

  1. Heat the brown sugar and 2 tsp cold water in a pan over a low heat until the sugar has dissolved. Increase the heat to medium-high, don't stir until the mixture caramelises, remove and allow to cool.
  2. Mix the yogurt, lime zest and caramel together and chill.
  3. Barbecue or griddle the fruit until lightly charred. Serve with a squeeze of lime juice and the yogurt.
