Griddled pork with freekeh & nectarine salad
Freekeh is made from young wheat grains that are roasted to give them an earthy, nutty flavour. Try it in this simple salad recipe.
2 portion(s), medium, chopped
6 g, shredded
4 medium, wedges
Pork Loin Steak, Lean, raw
- Cook the freekeh according to the pack instructions. Cool slightly, then put in a large bowl with the cucumbers, mint and onion. Season and toss to combine.
- Mist a griddle pan with cooking spray and preheat over a medium-high heat. Put the nectarine slices on the griddle and cook, turning occasionally for 4-5 minutes or until golden and tender. Transfer to a plate. Cover loosely with foil to keep warm.
- Season the pork to taste. Spray the griddle pan with a little more cooking spray and cook the pork for 2-3 minutes on each side, or until cooked though. Serve the salad topped with the pork and griddled nectarines.
