Egg, whole, raw

Egg white(s), raw

Chives, Fresh

½ tablespoons, finely chopped

Medium Fat Soft Goat's Cheese

40 g, crumbled

Sun Dried Tomatoes

50 g, sliced

Parsley, fresh

½ tablespoons, finely chopped


  1. In a mixing bowl, whisk together the egg, whites, chives and some seasoning until frothy and combined.
  2. Mist a 20cm nonstick frying pan generously with cooking spray. Set over a medium heat, then add the egg mixture and cook for 1-2 minutes, tilting the pan occasionally until the centre is just set.
  3. Scatter the cheese, sundried tomatoes and parsley over one half of the omelette, fold and cook for 2 minutes until warm.
